How should I store the caviar?

Caviar is a highly perishable delicacy. It must be stored in cold, refrigerated temperatures (26°- 38° F) with little to no air exposure. Upon receipt, leave it in unopened until you are ready to consume.

Can Caviar be frozen?

Black sturgeon caviar should never be frozen. However, all non-sturgeon caviar such as salmon roe, trout roe, tobiko, masago, etc., can be put in the freezer. The longer it is frozen the more the product develops traits that make it less favorable. This does not mean that you cannot consume it but it may lose its texture, egg size, and flavor profile upon thawing.

How long does caviar stay fresh for?

Bisou Caviar freshly packs everu order. We recommend consumption within the first 3 days of the delivery of the product for optimal flavor and quality.

Keep in mind, tins of sturgeon caviar if not exposed to air have a refrigerated shelf life of 4-6 weeks, while non-sturgeon caviar has a refrigerated shelf life of 2 weeks and a frozen shelf life of up to a year.

Upon opening the jar or tin, caviar can retain its freshness anywhere from 5 to 7 days.

Aside from color, is there a difference between red and black caviar?

Fish roe that is from a sturgeon is considered black caviar because the eggs are commonly darker in color. Red, orange, and even yellow fish roe from salmon and trout is known as red caviar in popular culture regardless of it meeting the anpve definition for caviar.

My caviar arrived but the ice packs have melted, is it spoiled?

We ship all of our refrigerated and/or frozen products with enough ice packs to keep the package cool for the duration of time it takes for it to arrive to your home. The gel packs are designed to be melted by the time you open your package and are ready to put your caviar into the refrigerator.

How do you serve caviar?

Our caviar may be served in numerous ways according to one’s personal preferences. A traditional way to serve caviar would be on top of a blini with our crème fraiche from Vermont's farms. A glass of champagne or a shot of vodka is also an excellent pairing. Additional accompaniments can range from hard boiled eggs, to quail eggs, to green onions, but the possibilities are endless. Caviar pairs seamlessly with almost any food that can use a touch of brine in flavor. We suggest serving your caviar using a mother of pearl spoon to ensure an ideal flavor. Using a metal spoon to serve caviar may result in an unsavory, metallic flavor due to oxidation. You should keep your caviar over ice when serving, we recommend investing in a caviar server to do so which can be found in our shop.

Is caviar kosher?

Not all types of caviar are considered Kosher. Bisou Caviar currently offers its valued customers Salmon Roe Salmon Roe (2.2 lb) at 1.1 Lbs and 2.2 Lbs. Both come with a Kosher Certified symbol to assure consumers that both the actual product and the production of it adhere to the Orthodox Union's requirements. Keep an eye out for our smaller packages as they will be available soon for the Jewish Holidays of 2022 - an excellent gift for when wine has become cliche.

Will my order stay fresh during delivery?

Bisou, Caviar uses specialized packaging that retains cold, as well as ice packs and other objects that inhibit the caviar from being damaged all while safely arriving to the destination

Where can I ship to?

Every state in the United States receives overnight delivery. If an order is placed weeks in advance, the order will be shipped in time to meet the specified delivery date.

Do you ship on Saturdays?

Saturday delivery is available but will cost an additional fee.

Do you ship on National Holidays?

We are unable to ship packages for delivery on the following holidays or the day after: New Year's Day, Memorial Day, Independence Day, Labor Day, Thanksgiving Day, and Christmas Day.
